With this wine we intend to recover a lost tradition and flavor. Continuos studies, research, and experience in wine making with the Classic Method have allowed us to
reinterpret the method of fermentation in the bottle. Produced exclusively from Lambrusco di Sorbara grapes grown on the estate.
The nose develops an intensity of violet and wild berries aromas. The mousse is fair and creamy, with a dry yet full flavor, with hints of raspberries.
The color is veiled red with hues of purple and it is finely bubbly. The sediment is the result of the second fermentation.
Due to its characteristics, it is perfect with Emilia’s traditional first courses like tortellini, lasagne, tagliatelle al ragù.
Ideal to accompany Zampone (stuffed pig’s trotter), roasts e boiled meats, and gnocco fritto a specialty from Modena.
